Ingredients:
- Boneless, skinless chicken breasts, sliced
- Mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.)
- Soy sauce
- Ginger, minced
- Garlic, minced
- Sesame oil
- Cornstarch
- Salt and pepper
- Rice or noodles (for serving)
Instructions:
- In a bowl, mix soy sauce, minced ginger, minced garlic, sesame oil, cornstarch, salt, and pepper to create a marinade.
- Place the sliced chicken in the marinade and let it marinate for about 15-20 minutes.
- Heat a large skillet or wok over high heat. Add a bit of oil.
- Add the marinated chicken and stir-fry until cooked through. Remove from the skillet.
- In the same skillet, stir-fry the mixed vegetables until they are tender-crisp.
- Return the cooked chicken to the skillet and stir-fry everything together.
- Serve the chicken stir-fry over cooked rice or noodles.
