Ingredients:
- Whole wheat tortilla wraps
- Hummus
- Sliced roasted red peppers
- Sliced cucumbers
- Sliced black olives
- Red onion slices
- Baby spinach or arugula
- Feta cheese crumbles
- Olive oil and balsamic vinegar (optional)
Instructions:
- Lay a tortilla flat and spread a layer of hummus across the center.
- Layer roasted red peppers, cucumbers, olives, red onion, spinach/arugula, and feta cheese.
- If desired, drizzle olive oil and balsamic vinegar over the vegetables.
- Fold in the sides of the tortilla and roll it up tightly.
- Cut the wrap in half and serve.
