Mediterranean Veggie Wrap

Ingredients:

  • Whole wheat tortilla wraps
  • Hummus
  • Sliced roasted red peppers
  • Sliced cucumbers
  • Sliced black olives
  • Red onion slices
  • Baby spinach or arugula
  • Feta cheese crumbles
  • Olive oil and balsamic vinegar (optional)

Instructions:

  1. Lay a tortilla flat and spread a layer of hummus across the center.
  2. Layer roasted red peppers, cucumbers, olives, red onion, spinach/arugula, and feta cheese.
  3. If desired, drizzle olive oil and balsamic vinegar over the vegetables.
  4. Fold in the sides of the tortilla and roll it up tightly.
  5. Cut the wrap in half and serve.
